Sunday Morning Beets


Woke up today with a bit of a headache. After pulling a double, working the restaurant’s booth at our town’s fall festival, I, of course, wanted to take advantage of a baby-free, husband-free night with my pals.

Hours of talk and laughs with my twenty-something teammates kept me up way past my suburban mom bedtime, but left me feeling socially refreshed and more in touch with my purpose in life. Which is a whole different story. And I’m still on that baby-free, husband-free clock, so I can’t hash out all the details. But, in a nutshell, a friend argued that my mission- to help others feel good about themselves – is not something everyone deserves. Au contraire buddy, but thanks for the Spotify share of Deerhunter.

Anyways, trying to manage the last few, precious hours to myself, I decided on a morning juice to jumpstart my ju-ju.  Here’s what I came up with while cleaning out the fridge. (You know, because I am never doing just one thing at a time.)

I named it Sunday Morning Beets.

  • 5 leaves of fresh beet greens
  • a quarter of a raw red beet, sliced in chunks
  • a few handfuls of Trader Joes organic baby spinach
  • fresh purple cabbage

Turned out beet red (obviously), dark, like rich healthy blood. Silky mouth-feel and hinted sweet. I felt good with every sip, meditating how my body, blood, and brain benefit from the nutrients of raw foods. Before you know it, my headache disappeared.

    I LOVE beet juice! When I’m juicing, I like to use beets for a sweet taste :)
